Ingredients
  

For the cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup coconut sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup unsweetened applesauce
  • 1 large apple peeled and chopped

For the topping:

  • ¼ cup brown sugar
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a medium bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, whisk together the coconut sugar, oil, and vanilla.
  • Add applesauce and stir to combine.
  • Gradually add the dry ingredients to the wet, mixing until combined.
  • Fold in the chopped apple.
  • Pour the batter into the prepared pan, smoothing the top.
  • For the topping: Mix brown sugar and cinnamon and sprinkle over the cake.
  • Bake for 35-40 minutes or until a toothpick comes out clean.
  • Let cool for 10 minutes, then transfer to a wire rack to cool completely.
