For the Crust:
- Crushed graham crackers: 1 ½ cups
- Melted butter: 4 tbsp
For the Ice Cream Layers:
- Vanilla ice cream softened: 2 cups
- Chocolate ice cream softened: 2 cups
For the Topping:
- Whipped cream: 1 cup
- Shaved chocolate: ¼ cup optional
Prepare the Crust:
Mix graham cracker crumbs with melted butter.
Press the mixture into the bottom of a 9-inch cake pan.
Freeze for 30 minutes to firm up.
Add the Ice Cream Layers:
Soften both the vanilla and chocolate ice creams.
Spread vanilla ice cream over the crust, followed by a layer of chocolate ice cream.
Use a spatula to gently swirl the two ice creams together. Freeze for 1 hour.
Add another layer of softened vanilla ice cream. Freeze for an additional hour.
Finish with the Whipped Cream:
Whip the cream until soft peaks form.
Spread whipped cream on top of the cake.
Sprinkle with shaved chocolate if desired.
Freeze for 3-4 hours to set completely.
