Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup brewed coffee chilled
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 cup chopped almonds optional
  • 1 tbsp chia seeds optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  • In a bowl, mix oats, almond flour, baking powder, and chia seeds.
  • Add brewed coffee, honey, and vanilla extract. Stir until everything is well combined.
  • Pour mixture into the greased dish and spread evenly.
  • Top with chopped almonds, if using.
  • Bake for 25 minutes or until golden brown. Cool before slicing.
