This Tiramisu Protein Cake combines classic Italian flavors with a boost of protein in each creamy, espresso-infused layer.

Ingredients
  

  • 1 cup almond flour
  • 1/4 cup vanilla protein powder
  • 1/3 cup Greek yogurt
  • 1/4 cup brewed espresso
  • 3 large eggs
  • 1/2 cup sugar
  • 1/2 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • Pinch of salt

Instructions
 

  • Preheat Oven
  • Set your oven to 350°F (175°C) and grease a baking pan.
  • Mix Dry Ingredients
  • In a bowl, combine almond flour, protein powder, and salt. Set aside.
  • Prepare Wet Ingredients
  • In a separate bowl, beat eggs and sugar until fluffy. Add Greek yogurt, vanilla extract, and mix well.
  • Combine and Bake
  • Gradually fold the dry ingredients into the wet mixture until smooth. Pour batter into the baking pan and bake for 25 minutes.
  • Make the Espresso Layer
  • Once the cake cools, poke small holes and pour espresso evenly over it for that classic tiramisu flavor.
  • Prepare Cream Layer
  • In a bowl, whisk mascarpone with a little more Greek yogurt until smooth and spread it over the espresso-soaked cake.
  • Finish with Cocoa Powder
  • Sift cocoa powder over the top before serving for that classic tiramisu look and flavor.
