Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp sugar
  • ½ cup unsalted butter melted

For the Cheesecake Filling:

  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup plain Greek yogurt
  • 2 tbsp acai powder or acai puree
  • ½ cup strawberry puree fresh or frozen
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 325°F and line the 8x8-inch baking pan with parchment paper.
  • Make the Crust:
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the pan.
  • Prepare the Filling:
  • In a separate bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing after each addition.
  • Mix in the Flavors:
  • Add Greek yogurt, acai powder, strawberry puree, and vanilla extract. Mix until smooth.
  • Bake:
  • Pour the cheesecake mixture over the crust. Bake for 40 minutes, or until set. Let it cool completely.
  • Chill:
  • Place the bars in the fridge for at least 3 hours to set.
  • Serve:
  • Cut into bars and enjoy the fruity, creamy bliss.
