Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee granules dissolved in 1 tbsp hot water
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions
 

  • Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together butter, brown sugar, and white sugar until fluffy.
  • Beat in the eggs and vanilla extract. Add the dissolved coffee for that glorious caffeine kick.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients.
  • Stir in the rolled oats.
  • Scoop dough onto baking sheets and flatten slightly. Bake for 12 minutes or until golden brown.
  • Cool for a few minutes on the sheets, then transfer to a wire rack.
