- 1 cup butter softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp instant coffee granules dissolved in 1 tbsp hot water
- 2 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a large mixing bowl, cream together butter, brown sugar, and white sugar until fluffy.
Beat in the eggs and vanilla extract. Add the dissolved coffee for that glorious caffeine kick.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients.
Stir in the rolled oats.
Scoop dough onto baking sheets and flatten slightly. Bake for 12 minutes or until golden brown.
Cool for a few minutes on the sheets, then transfer to a wire rack.
