Oatmeal banana bread with a decadent coffee icing. It's health food disguised as dessert, but you'll gladly fall for it.

Ingredients
  

For the Banana Bread:

  • Ripe bananas: 3 medium mashed
  • Rolled oats: 1 ½ cups
  • All-purpose flour: 1 cup
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Ground cinnamon: 1 teaspoon
  • Salt: ½ teaspoon
  • Granulated sugar: ½ cup
  • Brown sugar: ¼ cup
  • Eggs: 2 large
  • Milk dairy or non-dairy: ½ cup
  • Butter melted: ½ cup
  • Vanilla extract: 1 teaspoon

For the Coffee Icing:

  • Powdered sugar: 1 cup
  • Brewed coffee: 2 tablespoons
  • Butter: 2 tablespoons melted
  • Vanilla extract: ½ teaspoon
  • Salt: a pinch

Instructions
 

  • Step 1: Preheat and Prepare
  • Preheat the oven to 350°F (175°C).
  • Grease and line a 9x5 loaf pan with parchment paper.
  • Step 2: Mix the Dry Ingredients
  • In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Step 3: Mix the Wet Ingredients
  • In another bowl, mash bananas, then whisk in sugars, eggs, melted butter, milk, and vanilla.
  • Step 4: Combine Wet and Dry
  • Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  • Step 5: Bake
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60 minutes, or until a toothpick comes out clean.
  • Step 6: Prepare the Coffee Icing
  • In a small saucepan, melt butter and mix in coffee, vanilla, and powdered sugar. Stir until smooth.
  • Step 7: Drizzle and Cool
  • Let the banana bread cool for 10 minutes.
  • Drizzle the coffee icing over the warm bread.
