- 1 cup oats rolled
- 1/2 cup mixed nuts chopped
- 1/4 cup dried berries cranberries or blueberries
- 1/4 cup brewed coffee cooled
- 1/2 cup protein powder vanilla or unflavored
- 1/4 cup almond butter
- 2 tablespoons honey or maple syrup
- Pinch of salt
Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment.
Blend oats and nuts in a food processor until coarsely chopped.
Add coffee, almond butter, honey, and protein powder to the oat mixture. Blend until a sticky dough forms.
Add berries and pulse briefly to incorporate.
Press mixture evenly into the baking pan with a spatula.
Bake for 15 minutes or until the edges are golden. Cool and cut into bars.
