Ingredients
  

  • 1 cup oats rolled
  • 1/2 cup mixed nuts chopped
  • 1/4 cup dried berries cranberries or blueberries
  • 1/4 cup brewed coffee cooled
  • 1/2 cup protein powder vanilla or unflavored
  • 1/4 cup almond butter
  • 2 tablespoons honey or maple syrup
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment.
  • Blend oats and nuts in a food processor until coarsely chopped.
  • Add coffee, almond butter, honey, and protein powder to the oat mixture. Blend until a sticky dough forms.
  • Add berries and pulse briefly to incorporate.
  • Press mixture evenly into the baking pan with a spatula.
  • Bake for 15 minutes or until the edges are golden. Cool and cut into bars.
