Ingredients
  

  • Rolled oats: 1 cup
  • Chocolate protein powder: 1/4 cup
  • Instant coffee: 1 tbsp
  • Almond butter: 1/4 cup
  • Cocoa powder: 1 tbsp
  • Honey or maple syrup: 2 tbsp
  • Vanilla extract: 1 tsp
  • Chia seeds: 1 tbsp
  • Mini chocolate chips: 2 tbsp
  • Pinch of sea salt

Instructions
 

  • Blend oats: In a food processor, pulse the rolled oats until they’re broken down into a fine texture.
  • Add protein powder and coffee: Mix in the protein powder, cocoa powder, and instant coffee. Pulse until combined.
  • Incorporate wet ingredients: Add almond butter, honey, and vanilla. Blend until everything sticks together.
  • Add seeds and chocolate chips: Stir in chia seeds and mini chocolate chips with a spatula.
  • Form the bites: Roll the mixture into 1-inch balls.
  • Chill: Place on a tray and refrigerate for 10 minutes for firmness.
  • Serve or store: Enjoy immediately or store in an airtight container for up to a week.
