Preheat the Oven
Preheat your oven to 350°F (175°C) and line the muffin tin with cupcake liners.
Mix Dry Ingredients
In a large bowl, combine almond flour, protein powder, cocoa powder, sweetener, baking powder, and salt.
Combine Wet Ingredients
In another bowl, whisk together brewed coffee, applesauce, eggs, and vanilla extract until smooth.
Combine Mixtures
Pour the wet ingredients into the dry mixture and stir until just combined. Don’t overmix!
Fill Muffin Tin
Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Cool
Let the cupcakes cool in the tin for 5 minutes before transferring them to a cooling rack.
