  • 1 cup almond flour
  • ½ cup protein powder chocolate or vanilla
  • ½ cup cocoa powder unsweetened
  • ½ cup granulated sweetener like erythritol or sugar
  • 1 cup brewed coffee cooled
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 350°F (175°C) and line the muffin tin with cupcake liners.
  • Mix Dry Ingredients
  • In a large bowl, combine almond flour, protein powder, cocoa powder, sweetener, baking powder, and salt.
  • Combine Wet Ingredients
  • In another bowl, whisk together brewed coffee, applesauce, eggs, and vanilla extract until smooth.
  • Combine Mixtures
  • Pour the wet ingredients into the dry mixture and stir until just combined. Don’t overmix!
  • Fill Muffin Tin
  • Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  • Bake
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Cool
  • Let the cupcakes cool in the tin for 5 minutes before transferring them to a cooling rack.
