- 1 cup pistachios shelled, unsalted
- ½ cup almonds
- ½ cup cashews
- ¼ cup dark chocolate chunks
- 2 tbsp cocoa powder
- 1 tbsp instant espresso powder
- 2 tbsp maple syrup
- ½ tsp sea salt
- ¼ tsp cinnamon
Preheat oven to 350°F (175°C).
Mix pistachios, almonds, and cashews in a bowl.
In a separate bowl, whisk maple syrup, espresso powder, cocoa, and cinnamon.
Pour over nuts and stir to coat evenly.
Spread on a parchment-lined baking sheet.
Bake for 10 minutes, stirring halfway.
Let cool, then toss with chocolate chunks and sea salt.
