- 2 cups rolled oats
- 1 cup mixed nuts almonds, pecans, walnuts
- ¼ cup brewed coffee
- 2 tbsp cocoa powder
- 2 tbsp honey or maple syrup
- 1 tbsp coconut oil
- ½ tsp cinnamon
- 1 pinch sea salt
- ½ cup dark chocolate chunks
Preheat oven to 325°F (165°C).
In a saucepan, heat coffee, cocoa powder, honey, coconut oil, cinnamon, and salt until smooth.
In a bowl, combine oats and nuts, then pour the coffee mixture over them.
Spread evenly on a lined baking sheet and bake for 20 minutes, stirring halfway.
Let cool, then mix in chocolate chunks before storing (or eating immediately).
