Ingredients
  

  • 2 cups rolled oats
  • 1 cup mixed nuts almonds, pecans, walnuts
  • ¼ cup brewed coffee
  • 2 tbsp cocoa powder
  • 2 tbsp honey or maple syrup
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • 1 pinch sea salt
  • ½ cup dark chocolate chunks

Instructions
 

  • Preheat oven to 325°F (165°C).
  • In a saucepan, heat coffee, cocoa powder, honey, coconut oil, cinnamon, and salt until smooth.
  • In a bowl, combine oats and nuts, then pour the coffee mixture over them.
  • Spread evenly on a lined baking sheet and bake for 20 minutes, stirring halfway.
  • Let cool, then mix in chocolate chunks before storing (or eating immediately).
