Ingredients
  

Cookies:

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee granules
  • 1 cup semi-sweet chocolate chips

Espresso Frosting:

  • 1 cup powdered sugar
  • 2 tbsp unsalted butter softened
  • 1 tbsp heavy cream
  • 1 tsp espresso powder
  • 1 tsp hot water

Instructions
 

  • Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, salt, and cocoa powder.
  • Cream Butter & Sugar: Beat the softened butter and brown sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg, vanilla extract, and coffee granules.
  • Combine Dry & Wet Ingredients: Gradually add the dry ingredients to the wet mixture and mix until combined.
  • Add Chocolate Chips: Stir in chocolate chips.
  • Scoop Dough: Drop spoonfuls of dough onto the prepared baking sheet.
  • Bake: Bake for 10-12 minutes or until golden on the edges. Cool the cookies completely.
  • Prepare Frosting: In a bowl, mix powdered sugar, softened butter, heavy cream, and espresso powder dissolved in hot water.
  • Frost the Cookies: Once cookies are cooled, pipe or spread the espresso frosting over them.
