  • 1 cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tbsp instant coffee or espresso powder
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips
  • ¾ cup shredded coconut toasted

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in coffee powder, egg, and vanilla extract until smooth.
  • Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients.
  • Fold in chocolate chips and toasted coconut.
  • Scoop dough into balls and place them 2 inches apart on the baking sheet.
  • Bake for 10-12 minutes, or until edges turn golden brown.
  • Let them cool slightly before devouring.
