A delicious low-calorie cookie recipe with a kick of coffee, perfect for when you want something sweet but guilt-free.

Ingredients
  

  • 1 cup flour because we can’t do this without it
  • 2 tbsp instant coffee duh, coffee cookies
  • 1/2 tsp baking soda
  • 1/4 tsp salt balances the sweetness, trust me
  • 1/4 cup unsweetened applesauce low-calorie magic
  • 1/4 cup honey because life needs a little sweetness
  • 1/2 tsp vanilla extract
  • 1 egg the glue holding this all together

Instructions
 

  • Preheat your oven to 350°F. Lay parchment paper on your baking sheet because sticking is not in our agenda.
  • In a mixing bowl, whisk together the flour, instant coffee, baking soda, and salt.
  • In another bowl, mix the applesauce, honey, vanilla extract, and egg until combined.
  • Combine the wet and dry ingredients, stirring until fully blended. You want it smooth, but not like your ex's lies.
  • Scoop out tablespoon-sized balls and place them on the prepared baking sheet. Flatten slightly with your fingers.
  • Bake for 12-15 minutes. The edges should be golden brown, but don’t burn them like your New Year's resolutions.
  • Let them cool on a cooling rack before you stuff your face. Or don’t, it’s your life.
