Ingredients
  

For the Pumpkin Spice Latte:

  • 1 shot of espresso or 1/2 cup strong brewed coffee
  • 1/2 cup milk dairy or non-dairy
  • 2 tbsp pumpkin puree
  • 1 tbsp brown sugar
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • Whipped cream for topping

For the Spice Cookies:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions
 

  • Brew your espresso or strong coffee.
  • In a saucepan, heat milk, pumpkin puree, brown sugar, and pumpkin pie spice until warm and smooth.
  • Pour the pumpkin mixture into your coffee and stir well.
  • Top with whipped cream, if desired.
  • Preheat the oven to 350°F (175°C).
  • Cream together butter, granulated sugar, and brown sugar.
  • Add egg and vanilla, then mix until smooth.
  • Stir in flour, cinnamon, ginger, cloves, baking soda, and salt.
  • Roll dough into balls and place on a baking sheet.
  • Bake for 10-12 minutes, until edges are golden brown.
  • Let the cookies cool before serving with your hot latte.
