For the Honey Banana Bread:

  • Ripe bananas: 3 medium mashed
  • Honey: ½ cup
  • All-purpose flour: 1 ¾ cups
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Salt: ½ teaspoon
  • Ground cinnamon: 1 teaspoon
  • Brown sugar: ¼ cup
  • Eggs: 2 large
  • Greek yogurt: ½ cup
  • Butter melted: ½ cup
  • Vanilla extract: 1 teaspoon

For the Coffee Glaze:

  • Powdered sugar: ¾ cup
  • Brewed coffee: 2 tablespoons
  • Butter: 1 tablespoon melted
  • Pinch of salt

Instructions
 

  • Step 1: Preheat and Prep
  • Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan and line it with parchment paper.
  • Step 2: Mix Dry Ingredients

  • Fold in the mashed bananas gently. Do not overmix.
  • Step 6: Bake
  • Pour the batter into the prepared loaf pan. Bake for 50 minutes or until a toothpick inserted comes out clean.
  • Step 7: Prepare Coffee Glaze
  • In a small saucepan, whisk together powdered sugar, brewed coffee, melted butter, and a pinch of salt until smooth.
  • Step 8: Drizzle and Serve
  • Once the bread has cooled, drizzle the coffee glaze over the top. Let it set before slicing.
