Ingredients
  

  • Rolled oats: 1 cup
  • Hazelnut butter: 1/4 cup
  • Coffee grounds finely ground or espresso powder: 1 tbsp
  • Vanilla protein powder: 1/3 cup
  • Honey or maple syrup: 3 tbsp
  • Chopped hazelnuts: 2 tbsp
  • Chia seeds: 1 tbsp
  • Vanilla extract: 1 tsp
  • Pinch of sea salt

Instructions
 

  • Process dry ingredients: Blend oats, protein powder, coffee, and chia seeds in a food processor until combined.
  • Mix wet ingredients: Add hazelnut butter, honey, and vanilla extract. Blend until it forms a dough-like texture.
  • Add hazelnuts: Fold in chopped hazelnuts with a spatula.
  • Shape the bites: Roll the mixture into 1-inch balls.
  • Chill: Refrigerate bites for 10 minutes to firm them up.
  • Serve or store: Enjoy immediately or store in an airtight container for up to a week.
