  • Instant coffee powder: 2 teaspoons
  • Hot water: 1 tablespoon
  • Cocoa powder: 1 tablespoon

Instructions
 

  • Step 1: Preheat and Prep
  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Step 2: Mix Dry Ingredients
  • Whisk together gluten-free flour, baking soda, and salt in a bowl.
  • Step 3: Cream Butter and Sugars
  • Beat the softened vegan butter with brown and granulated sugars until light and fluffy.
  • Step 4: Add Wet Ingredients
  • Stir in the flaxseed mixture (water + flaxseed) and vanilla extract. Mix until combined.
  • Step 5: Combine Wet and Dry Ingredients
  • Gradually add dry ingredients to wet ingredients, mixing until dough forms.
  • Step 6: Make Coffee Swirl
  • Dissolve coffee powder in hot water. Stir in cocoa powder. Mix until smooth.
  • Step 7: Form and Swirl Cookies
  • Scoop dough onto baking sheet. Drizzle coffee swirl over each cookie, then swirl with a toothpick.
  • Step 8: Bake
  • Bake for 10-12 minutes, until edges are golden and center is firm. Cool on a wire rack.
