Ingredients

  • 2 cups vanilla ice cream softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 package of fondant enough to cover the cake and make animals
  • 1/4 cup dark chocolate optional for decoration
  • Food coloring for animals
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Ice Cream Base: Line a 9-inch cake pan with plastic wrap. Fill with softened vanilla ice cream and freeze for 2-3 hours.
  • Mold Animals: Roll out fondant and color it to create animal shapes (think bears, lions, or whatever else you can dream up).
  • Make Ganache: Heat heavy cream and pour it over dark chocolate. Stir until smooth, then let cool.
  • Cover with Fondant: Once the ice cream is frozen, cover it with fondant, smoothing the edges.
  • Assemble the Animals: Attach the fondant animals around the cake.
  • Chill the Cake: Freeze the cake for 1-2 hours for all the elements to set.
  • Serve: Slice it up, and watch your guests’ jaws drop.
