Ingredients
  

  • 1 cup oat flour or all-purpose flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 shot espresso or ¼ cup strong brewed coffee
  • ¾ cup almond milk or milk of choice
  • 1 large egg
  • 1 tablespoon maple syrup optional, for sweetness
  • 1 tablespoon melted coconut oil

Instructions
 

Mix Dry Ingredients

  • In a mixing bowl, combine oat flour, protein powder, baking powder, and salt. Stir to blend.

Add Wet Ingredients

  • Pour in espresso, almond milk, egg, maple syrup, and melted coconut oil. Whisk until smooth and free of lumps.

Preheat and Cook

  • Heat your waffle maker. Pour in the batter, close, and cook according to waffle maker instructions (usually 3–4 minutes).

Serve and Top

  • Serve hot with fresh berries, nuts, or a drizzle of maple syrup.
