- 1 cup cream cheese softened
- ½ cup sour cream
- ¼ cup sugar
- 1 large egg
- 1 tbsp espresso powder
- 1 tsp vanilla extract
- 1 tsp salt
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Mix graham cracker crumbs, melted butter, and a pinch of salt until combined. Press into the bottom of each muffin cup.
In a separate bowl, beat cream cheese, sour cream, sugar, and egg until smooth. Add espresso powder and vanilla extract. Mix again.
Spoon the mixture over the prepared crust in each muffin cup.
Bake for 15-20 minutes, or until the edges are set.
Let them cool, then refrigerate for at least 2 hours before serving.
