Ingredients
  

For the Espresso Caramel:

  • ½ cup granulated sugar
  • 2 tbsp water
  • ¼ cup heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp espresso powder
  • ¼ tsp sea salt

For the Fluff:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp instant espresso powder

Instructions
 

Make the Espresso Caramel:

  • Heat sugar and water in a saucepan over medium heat until golden brown.
  • Carefully whisk in heavy cream (it will bubble aggressively).
  • Add butter, vanilla, espresso powder, and salt, stirring until smooth.
  • Let cool slightly before using.

Make the Fluff:

  • Whip heavy cream, powdered sugar, and espresso powder until soft peaks form.
  • Gently fold in cooled caramel until just combined.
  • Spoon into serving glasses and refrigerate for at least 30 minutes.
