Ingredients
  

  • 4 large tortillas
  • 4 large eggs
  • 1/4 cup brewed espresso cooled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup black beans drained
  • 1/4 cup salsa
  • 1/2 avocado sliced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Whisk eggs in a mixing bowl with cooled espresso, salt, and pepper.
  • Heat olive oil in a frying pan over medium heat.
  • Scramble the egg mixture until fully cooked and set aside.
  • Warm tortillas and layer scrambled eggs, cheese, black beans, salsa, and avocado.
  • Fold into burritos and serve immediately or wrap for meal prep.
