- 2 ripe bananas mashed
- 1/4 cup brewed espresso cooled
- 1/4 cup unsalted butter melted
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon optional
- 1/2 tsp vanilla extract
- Pinch of salt
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a bowl, combine mashed bananas, melted butter, and sugar. Mix well.
Add egg, cooled espresso, and vanilla. Stir until combined.
In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
Slowly incorporate dry ingredients into the wet mixture. Stir until smooth.
Pour batter into the greased loaf pan.
