Ingredients
  

Base Layer

  • 1 ½ cups crushed cookies graham crackers, chocolate wafers, or Oreos
  • 5 tbsp melted butter or coconut oil

Ice Cream Layers

  • 4 cups vanilla ice cream softened slightly
  • 4 cups chocolate ice cream softened slightly
  • 4 cups strawberry ice cream optional, softened slightly

Toppings and Decorations

  • 1 cup whipped cream vegan or dairy-based
  • ½ cup rainbow sprinkles
  • ½ cup chocolate chips
  • Fresh berries crushed nuts, or candy pieces (optional)

Instructions
 

Step 1: Prepare the Crust

  • Mix crushed cookies with melted butter or coconut oil in a bowl until evenly coated.
  • Press the mixture into the bottom of a lined springform pan. Freeze for 15 minutes to set.

Step 2: Layer the Ice Cream

  • Spread the vanilla ice cream evenly over the crust. Freeze for 20 minutes.
  • Add the chocolate ice cream layer and smooth the surface with an offset spatula. Freeze for 20 minutes.
  • Optional: Add a strawberry ice cream layer for a Neapolitan vibe. Freeze for 4 hours or until firm.

Step 3: Add Toppings

  • Spread whipped cream over the top and sides of the cake.
  • Sprinkle with rainbow sprinkles, chocolate chips, or your chosen decorations.

Step 4: Freeze and Serve

  • Freeze the completed cake for 1–2 hours to set.
  • Slice with a warm knife for clean, neat portions.
