For the Salad:
- 2 cucumbers sliced
- 1 ripe avocado cubed
- 1 tbsp olive oil
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
For the Mocha Pudding:
- 1 cup milk
- 1/4 cup sugar
- 2 tbsp cocoa powder
- 1 tbsp instant coffee
- 2 tbsp cornstarch
- 1/4 tsp vanilla extract
- Pinch of salt
For the salad, toss cucumber and avocado with olive oil, lime juice, salt, pepper, and cilantro. Set aside.
In a small saucepan, whisk together milk, sugar, cocoa powder, instant coffee, and cornstarch.
Cook over medium heat until thickened, whisking constantly.
Once thickened, remove from heat and stir in vanilla extract and salt.
Let the pudding cool for a few minutes.
Serve the salad topped with a generous spoonful of mocha pudding.
