Ingredients
  

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 1 cup Sugar
  • 6 yolks egg
  • 1/4 cup Freshly ground coffee beans
  • 1 cup Chopped toasted walnuts

Instructions
 

  • In a medium saucepan, heat the heavy cream and milk over medium heat until it starts to simmer.
  • Add the coffee and stir well. Remove from heat and let it steep for 10 minutes.
  • Strain the mixture through a fine-mesh sieve to remove the coffee grounds and return it to the saucepan.
  • In a mixing bowl, whisk the egg yolks and sugar until pale and thick.
  • Add the cream mixture to the egg yolk mixture gradually, whisking continuously.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon.
  • Pour the mixture through a fine-mesh sieve into a bowl and let it cool completely.
  • Fold in the toasted walnuts and transfer the mixture to an ice cream maker. Freeze according to the manufacturer's instructions until it reaches the desired consistency.
  • Transfer the ice cream to a container and freeze for at least 2 hours or until ready to serve.
