Savory and slightly sweet sweet potato hash with a coffee twist, perfect for meal prep or a hearty breakfast.

- 2 large sweet potatoes diced
- 1/4 cup brewed coffee
- 1/2 large onion chopped
- 1 red bell pepper diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional: Chopped parsley for garnish
Heat olive oil in a large skillet over medium heat.
Add diced sweet potatoes and sauté for 10 minutes, stirring occasionally.
Toss in chopped onion and red bell pepper. Cook for another 5 minutes.
Pour in brewed coffee, add paprika, garlic powder, salt, and pepper. Stir and cook for 5 more minutes.
Once sweet potatoes are tender, remove from heat and garnish with parsley if desired.
Serve hot or store for meal prep.
