Savory and slightly sweet sweet potato hash with a coffee twist, perfect for meal prep or a hearty breakfast.

Ingredients
  

  • 2 large sweet potatoes diced
  • 1/4 cup brewed coffee
  • 1/2 large onion chopped
  • 1 red bell pepper diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add diced sweet potatoes and sauté for 10 minutes, stirring occasionally.
  • Toss in chopped onion and red bell pepper. Cook for another 5 minutes.
  • Pour in brewed coffee, add paprika, garlic powder, salt, and pepper. Stir and cook for 5 more minutes.
  • Once sweet potatoes are tender, remove from heat and garnish with parsley if desired.
  • Serve hot or store for meal prep.
