Instructions
 

  • Preheat the Oven:
  • Set oven to 350°F (175°C). Grease a 9-inch cake pan.
  • Prepare the Sponge Batter:
  • Beat eggs and sugar until light and fluffy. Add vanilla extract and mix well.
  • Combine Dry Ingredients:
  • Sift flour, baking powder, and salt together. Gradually fold into the egg mixture.
  • Bake the Cake:
  • Pour batter into the pan. Bake for 30 minutes or until a toothpick comes out clean.
  • Prepare the Coffee Soak:
  • Mix hot espresso, sugar, and coffee liqueur until sugar dissolves.
  • Soak the Cake:
  • Poke small holes in the sponge. Slowly pour the coffee mixture over the warm cake.
  • Let It Absorb:
  • Allow cake to sit for 15 minutes so the coffee fully soaks in.
  • Top and Serve:
  • Add whipped cream and a dusting of cocoa powder before serving.
