  • 3 ripe bananas mashed
  • 1/2 cup strong brewed coffee
  • 1/2 cup melted butter or coconut oil
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped dark chocolate

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • Mash bananas in a bowl until smooth.
  • Stir in brewed coffee, melted butter, brown sugar, and vanilla extract.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Slowly mix dry ingredients into the wet mixture until just combined.
  • Fold in chopped dark chocolate, keeping some for topping.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 50 minutes or until a toothpick inserted comes out clean.
  • Let the bread cool, then drizzle with extra coffee for a deeper flavor.
