Rich, creamy coffee-flavored protein rice pudding.

Ingredients
  

  • 1 cup cooked rice
  • 1/2 cup brewed coffee
  • 1 cup milk or almond milk
  • 1 scoop vanilla protein powder
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract

Instructions
 

  • Combine Ingredients
  • In a medium saucepan, combine cooked rice, coffee, milk, and salt. Stir well to blend.
  • Heat Mixture
  • Heat the mixture over medium heat until it begins to simmer, stirring occasionally.
  • Add Sweetener and Spice
  • Add maple syrup, cinnamon, and vanilla extract. Stir and let simmer for about 10 minutes, until thickened.
  • Blend in Protein Powder
  • Stir in vanilla protein powder and keep stirring until fully incorporated and creamy.
  • Serve Warm or Cold
  • Divide into bowls and serve warm, or chill for a refreshing treat.
