  • 1/4 cup brewed coffee cooled
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup shredded coconut unsweetened
  • 1/4 cup chopped nuts walnuts or almonds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • In a mixing bowl, combine oats, protein powder, and salt.
  • Add almond butter, honey, and brewed coffee, mixing until everything sticks together.
  • Fold in shredded coconut and chopped nuts, incorporating evenly.
  • Roll mixture into bite-sized balls, about 1 inch in diameter.
  • Place bites on a parchment-lined baking sheet or plate, and refrigerate for at least 30 minutes.
  • Store in an airtight container in the fridge for up to one week.
