- 1/4 cup brewed espresso
- 3 large egg yolks
- 1/4 cup sugar plus extra for topping
- 1 scoop vanilla protein powder
- 1 teaspoon vanilla extract

Preheat and Prepare
Preheat your oven to 325°F (160°C). Place the ramekins in a baking dish.
Heat the Cream and Coffee
In a saucepan, warm the cream, milk, and espresso until hot, but not boiling. Stir in vanilla extract and salt.
Whisk the Eggs
In a bowl, whisk egg yolks with sugar until pale and slightly thickened. Add protein powder, mixing well.
Combine Mixtures
Slowly pour the hot cream mixture into the egg mixture, whisking continuously to avoid cooking the eggs.
Bake
Pour the mixture into ramekins. Fill the baking dish with hot water until it reaches halfway up the ramekins. Bake for 40 minutes.
Cool and Chill
Let the crème brûlée cool, then refrigerate for at least 2 hours until set.
Caramelize the Sugar
Before serving, sprinkle each custard with sugar and torch until caramelized and crispy.
