Ingredients
  

  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup brewed espresso
  • 3 large egg yolks
  • 1/4 cup sugar plus extra for topping
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat and Prepare
  • Preheat your oven to 325°F (160°C). Place the ramekins in a baking dish.
  • Heat the Cream and Coffee
  • In a saucepan, warm the cream, milk, and espresso until hot, but not boiling. Stir in vanilla extract and salt.
  • Whisk the Eggs
  • In a bowl, whisk egg yolks with sugar until pale and slightly thickened. Add protein powder, mixing well.
  • Combine Mixtures
  • Slowly pour the hot cream mixture into the egg mixture, whisking continuously to avoid cooking the eggs.
  • Bake
  • Pour the mixture into ramekins. Fill the baking dish with hot water until it reaches halfway up the ramekins. Bake for 40 minutes.
  • Cool and Chill
  • Let the crème brûlée cool, then refrigerate for at least 2 hours until set.
  • Caramelize the Sugar
  • Before serving, sprinkle each custard with sugar and torch until caramelized and crispy.
