Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup protein powder chocolate or vanilla
  • 1/4 cup almond flour
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup brewed coffee cooled
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chocolate chips optional

Instructions
 

Preheat Oven

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients

  • In a mixing bowl, combine rolled oats, protein powder, almond flour, baking powder, salt, and cinnamon. Mix well.

Mix Wet Ingredients

  • In a separate bowl, whisk together almond butter, brown sugar, coffee, and vanilla extract until smooth.

Combine Mixtures

  • Pour the wet mixture into the dry ingredients and stir until fully combined. Add chocolate chips if desired.

Shape Cookies

  • Drop spoonfuls of dough onto the prepared baking sheet, flattening them slightly with your fingers.

Bake

  • Bake for 15 minutes or until the edges are golden brown. Let cool for a few minutes.

Enjoy

  • Transfer cookies to a wire rack to cool completely. Grab one (or two) for breakfast!
