  • 4 large eggs
  • 2 tablespoons brewed coffee strong
  • 1/4 cup black beans drained and rinsed
  • 1/4 cup bell pepper diced
  • 1/4 cup onion diced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large tortillas
  • 1/4 cup shredded cheese optional, for topping
  • Sour cream or salsa for serving

Instructions
 

  • Whisk Eggs
  • In a mixing bowl, whisk together eggs, brewed coffee, cumin, salt, and black pepper until blended.
  • Sauté Vegetables
  • Heat a non-stick skillet over medium heat. Add diced bell pepper and onion, sautéing for 3-4 minutes until softened.
  • Cook Eggs
  • Pour the egg mixture into the skillet. Stir occasionally, cooking until the eggs are just set, about 5-7 minutes.
  • Add Beans
  • Stir in the black beans and cook for another minute until heated through.
  • Assemble Burritos
  • Divide the egg mixture between the tortillas. Sprinkle with cheese, if desired. Roll up the tortillas, folding in the sides to seal.
