Ingredients
  

  • 1 cup oats rolled
  • 1/4 cup brewed coffee cooled
  • 1/2 cup Greek yogurt plain or vanilla
  • 1/2 cup protein powder vanilla or unflavored
  • 1/4 cup nut butter peanut or almond
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • Mix oats and protein powder in a large bowl, stirring to combine evenly.
  • Add coffee, Greek yogurt, nut butter, and honey to the dry mixture. Stir until a thick dough forms.
  • Transfer dough to the baking pan and press it evenly with a spatula.
  • Bake for 15 minutes or until edges are lightly golden. Allow cooling before slicing.
