For the Coffee Mousse
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 tbsp instant coffee dissolved in 1 tbsp hot water
- ½ tsp vanilla extract
- ½ tsp gelatin bloomed in 1 tbsp cold water
For the Chocolate Shavings
- 1 oz dark chocolate chilled
Prepare the Mousse
Whip heavy cream until soft peaks form.
Add powdered sugar and continue whipping until stiff peaks form.
Gently fold in dissolved coffee and vanilla extract.
Melt bloomed gelatin over low heat until dissolved.
Fold gelatin into mousse and mix gently.
Spoon into serving glasses and chill for 2 hours.
