Ingredients
  

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tbsp espresso powder
  • ½ tsp vanilla extract
  • ½ cup mascarpone cheese
  • 1 cup mixed fresh fruit strawberries, raspberries, or whatever isn’t rotting in your fridge

Instructions
 

  • In a bowl, whisk heavy cream, sugar, and espresso powder until soft peaks form.
  • In another bowl, beat mascarpone with vanilla extract until smooth.
  • Gently fold the whipped cream mixture into the mascarpone.
  • Spoon the mousse into serving cups and refrigerate for at least 30 minutes.
  • Top with fresh fruit before serving.
