Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tbsp instant coffee or espresso powder
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground ginger

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Beat butter, brown sugar, and granulated sugar until fluffy.
  • Mix in espresso powder, egg, and vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Scoop dough into small balls and place them 2 inches apart on the baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Let them cool slightly before devouring.
