  • Chocolate protein powder: 1/4 cup
  • Instant coffee: 1 tbsp
  • Peanut butter: 1/4 cup
  • Cocoa powder: 1 tbsp
  • Honey or maple syrup: 2 tbsp
  • Vanilla extract: 1 tsp
  • Chia seeds: 1 tbsp
  • Mini chocolate chips: 2 tbsp
  • Pinch of sea salt

Instructions
 

  • Blend dry ingredients: In a food processor, pulse the oats, protein powder, cocoa powder, instant coffee, and chia seeds until combined.
  • Incorporate wet ingredients: Add peanut butter, honey, and vanilla. Blend until the mixture forms a dough-like consistency.
  • Mix in chocolate chips: Stir in mini chocolate chips by hand, using a spatula.
  • Shape bites: Roll the mixture into 1-inch balls.
  • Chill: Place the bites on a tray and refrigerate for 10 minutes to firm up.
  • Serve or store: Enjoy immediately or store in an airtight container for up to a week.
