For the Churros:
- 1 cup water
- 2 tbsp unsalted butter
- 1 tbsp granulated sugar
- ½ tsp salt
- 1 cup all-purpose flour
- 1 tbsp instant espresso powder
- 1 large egg
- ½ tsp vanilla extract
- Vegetable oil for frying
For the Coffee Caramel Drizzle:
- 1 cup sugar
- ½ cup heavy cream
- ¼ cup brewed espresso
- 2 tbsp unsalted butter
- ¼ tsp salt
Make the Churro Dough:
Heat water, butter, sugar, and salt in a saucepan until it simmers.
Add flour and espresso powder, stirring vigorously until a smooth dough forms.
Remove from heat and let it cool for a few minutes.
Mix in egg and vanilla, stirring until fully incorporated.
Transfer dough to a piping bag with a star tip.
Fry the Churros:
Heat oil to 350°F (175°C) in a deep pot.
Pipe churro dough into the hot oil, cutting pieces to desired length.
Fry until golden brown, about 3–4 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Make the Coffee Caramel Drizzle:
Melt sugar in a saucepan over medium heat until golden brown.
Slowly whisk in heavy cream and brewed espresso.
Stir in butter and salt until smooth.
Drizzle over warm churros and serve immediately
