Instructions
Preheat oven to 350°F (175°C) and line your baking pan with parchment paper.
In a bowl, combine oats, cinnamon, and salt.
In another bowl, whisk together coffee, honey, coconut oil, and vanilla.
Pour wet ingredients into the dry ingredients, mixing well.
Stir in nuts and chocolate chips if using.
Spread mixture evenly in the pan and bake for 20 minutes, until firm.
Cool before slicing into bars.
