- 1 cup rolled oats
- 1/2 cup shredded coconut unsweetened
- 1/4 cup ground coffee finely ground
- 1/4 cup almond butter or nut butter of choice
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 tbsp chia seeds
- Pinch of salt
Combine oats, shredded coconut, ground coffee, chia seeds, and salt in a mixing bowl.
Stir in almond butter, honey, and vanilla extract.
Mix until all ingredients are combined and form a sticky dough.
Roll into small bite-sized balls and place on a tray.
Refrigerate for at least 30 minutes to set.
Enjoy immediately or store for later.
