Quick and easy no-bake energy bites with coffee and coconut to keep you going throughout the day.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup shredded coconut unsweetened
  • 1/4 cup ground coffee finely ground
  • 1/4 cup almond butter or nut butter of choice
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds
  • Pinch of salt

Instructions
 

  • Combine oats, shredded coconut, ground coffee, chia seeds, and salt in a mixing bowl.
  • Stir in almond butter, honey, and vanilla extract.
  • Mix until all ingredients are combined and form a sticky dough.
  • Roll into small bite-sized balls and place on a tray.
  • Refrigerate for at least 30 minutes to set.
  • Enjoy immediately or store for later.
