Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 3 ripe bananas mashed
  • ½ cup strong brewed coffee cooled
  • 1 tsp vanilla extract

For the Coffee Frosting:

  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tbsp instant coffee dissolved in 2 tbsp hot water
  • ½ tsp vanilla extract
  • 2 tbsp heavy cream

Instructions
 

  • Preheat the Oven:
  • Set it to 350°F (175°C). Grease and line two 8-inch cake pans.
  • Prepare the Dry Ingredients:
  • Whisk flour, baking soda, and salt in a bowl.
  • Mix the Wet Ingredients:
  • Cream butter and sugar until fluffy. Add eggs, mashed bananas, coffee, and vanilla. Mix well.
  • Combine and Bake:
  • Gradually fold in the dry ingredients. Divide the batter evenly between the pans.
  • Bake the Cake Layers:
  • Bake for 30–35 minutes. Let them cool completely before frosting.
  • Make the Frosting:
  • Beat butter until smooth. Add powdered sugar, dissolved coffee, vanilla, and heavy cream. Beat until fluffy.
  • Assemble the Cake:
  • Spread frosting on one cake layer, stack the second layer, and frost the top and sides.
  • Serve and Enjoy:
  • Slice and enjoy with extra coffee.
