Now, I might enjoy this beauty on those rare occasions when I'm feeling extra generous, like when I want to reward myself for just being amazing. Whether it’s a sweltering Portland summer day or an overly ambitious Monday, this cold brew gets me through. Trust me, it’s the kind of coffee that makes you look forward to Monday mornings.
Servings 1 serving
Calories 50 kcal
- 1 cup coarsely ground coffee beans
- 1 cup coconut water
- 1 cup cold water
- 1 tablespoon maple syrup optional
- Ice cubes
Mix Coffee and Water: In a large jar or pitcher, combine the coarsely ground coffee beans with the cold water. Stir to ensure all the coffee grounds are saturated.
Steep: Cover and let the mixture steep in the refrigerator for 12 to 24 hours. The longer it steeps, the stronger it gets. Yes, even more intense than your usual coffee fix!
Strain: After steeping, strain the coffee through a fine mesh strainer or coffee filter into a large bowl. Discard the grounds.
Add Coconut Water: Stir in the coconut water. For a touch of sweetness, mix in the maple syrup if desired.
Serve: Pour the coconut cold brew over ice cubes. Enjoy, and bask in your superior coffee-making skills.
