Ingredients

  • Mini chocolate chips: 2 tbsp
  • Chia seeds: 1 tbsp
  • Pinch of sea salt

Instructions
 

  • Combine dry ingredients: In a food processor, pulse oats, shredded coconut, instant coffee, and chia seeds until mixed.
  • Add wet ingredients: Blend in almond butter, honey, and vanilla extract until the mixture forms a dough.
  • Mix in chocolate chips: Stir in mini chocolate chips using a spatula.
  • Shape bites: Roll the mixture into 1-inch balls.
  • Chill: Place the bites on a tray and refrigerate for 10 minutes.
  • Serve or store: Enjoy right away or store in an airtight container for up to a week.
