These Coconut Coffee Bliss Balls blend rich coffee, sweet coconut, and just a hint of chocolate for a snack that energizes and satisfies.

Ingredients
  

  • 1 cup pitted dates
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup ground coffee preferably espresso
  • 2 tbsp cocoa powder
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • In a food processor, combine dates, coffee, cocoa powder, chia seeds, and vanilla extract. Blend until smooth.
  • Add coconut, honey, and salt. Pulse a few times to combine.
  • Roll the mixture into bite-sized balls, about 1 inch in diameter.
  • Store in an airtight container in the fridge for up to a week or freeze for longer.
