- 1 cup pitted dates
- 1/2 cup shredded unsweetened coconut
- 1/4 cup ground coffee preferably espresso
- 2 tbsp cocoa powder
- 1 tbsp chia seeds
- 1 tbsp honey or maple syrup
- 1/4 tsp vanilla extract
- Pinch of salt
In a food processor, combine dates, coffee, cocoa powder, chia seeds, and vanilla extract. Blend until smooth.
Add coconut, honey, and salt. Pulse a few times to combine.
Roll the mixture into bite-sized balls, about 1 inch in diameter.
Store in an airtight container in the fridge for up to a week or freeze for longer.
