  • Brewed coffee cooled: 2 tablespoons

Instructions
 

  • Step 1: Preheat and Prep
  • Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  • Step 2: Mix Dry Ingredients
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Step 3: Blend Wet Ingredients
  • In another bowl, beat eggs, sugar, melted butter, vanilla, and Greek yogurt until smooth. Stir in mashed bananas and shredded coconut.
  • Step 4: Combine Wet and Dry Mixtures
  • Gradually fold the dry mixture into the wet ingredients until just incorporated.
  • Step 5: Bake
  • Pour the batter into the prepared loaf pan. Bake for 50 minutes or until a toothpick comes out clean. Cool completely.
  • Step 6: Prepare the Coffee Drizzle
  • Whisk together cooled coffee, cocoa powder, powdered sugar, and softened butter until smooth and thick.
  • Step 7: Glaze and Serve
  • Drizzle the coffee glaze over the cooled banana bread. Slice and serve
