Preheat Oven
Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
Mix Dry Ingredients
In a mixing bowl, combine rolled oats, protein powder, cinnamon, and salt. Stir well.
Add Wet Ingredients
In another bowl, mix almond butter, honey (or maple syrup), coffee, and vanilla extract until smooth.
Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until everything is well combined.
Spread Mixture
Transfer the mixture into the prepared baking dish, pressing it down evenly.
Bake
Bake for 20 minutes or until the edges are golden brown.
Cool and Cut
Let the bars cool completely before cutting them into squares. Enjoy!
